Baked Potatoes with Crispy Broccoli and Bacon

Ingredients:
- 4x 8oz Russet Potatoes (scrubbed clean)
- Olive Oil
- Kosher salt & ground black pepper
- 1lb fresh broccoli, cut into 1-inch pieces
- 4oz bacon (~4 slices), diced
To Finish:
- Butter
- Cheddar cheese, coarsely grated
- Sour cream
- Minced fresh chives
Steps:
- Preheat oven to 450 F (No this is not too hot. Trust the process)
- Poke each potato with a fork several times (Otherwise they will EXPLODE!)
- Lightly coat each potato in olive oil
- Season each potato with salt and pepper
- Bake them (rack or tray is fine) for 45 minutes to 1 hour (depending on potato size)
- Meanwhile toss the broccoli with olive oil (just enough to barely coat it)
- Season with salt and pepper
- Add the bacon and broccoli to a tray pan
- 15 minutes into your potato baking time, add the broccoli, bacon pan to the oven
- Roast broccoli and bacon for 25 to 30 minutes - moving everything around a couple of times during roasting
- To Serve: perforate the potato down the middle with a fork, and then slice down the middle. Be VERY careful when you open the potato. Hot steam will come pouring out!
- Load each potato with butter, salt, pepper, cheddar, and roasted broccoli and bacon, sour cream, and chives
