Chicken Chow Mein

Ingredients:

  • 1 to 2 lbs of cooked chicken
  • 3 cups of celery, chopped
  • 1 cup of onions, chopped
  • 1 cup of mushrooms, sliced
  • 2 1/2 tablespoons of cornstarch (or rice flour)
  • 1 large can of condensed chicken broth
  • 1/4 cup of soy sauce
  • 1lb of bean sprouts (canned or fresh)
  • 5 oz of water chestnuts, drained and sliced
  • 2 tablespoons of olive oil

Steps:

  1. In a large Dutch oven cook the onions, celery, and mushrooms in 2 tablespoons of olive oil until tender crisp - stir often
  2. Blend the cornstarch with 1/4 cup of water, and add to the pot
  3. Add broth, and soy sauce.
  4. Stir in the vegetables.
  5. Add meat, bean sprouts, and water chestnuts.
  6. Stir until thickened
