Chicken Chow Mein

Ingredients:
- 1 to 2 lbs of cooked chicken
- 3 cups of celery, chopped
- 1 cup of onions, chopped
- 1 cup of mushrooms, sliced
- 2 1/2 tablespoons of cornstarch (or rice flour)
- 1 large can of condensed chicken broth
- 1/4 cup of soy sauce
- 1lb of bean sprouts (canned or fresh)
- 5 oz of water chestnuts, drained and sliced
- 2 tablespoons of olive oil
Steps:
- In a large Dutch oven cook the onions, celery, and mushrooms in 2 tablespoons of olive oil until tender crisp - stir often
- Blend the cornstarch with 1/4 cup of water, and add to the pot
- Add broth, and soy sauce.
- Stir in the vegetables.
- Add meat, bean sprouts, and water chestnuts.
- Stir until thickened
