Asian Chicken Mason Jar Salad

Ingredients:
- 1 1/3 cup of halved snap peas
- 1 cup of grated carrots
- 1 red pepper, julienned
- 1 1/3 cups of thinly sliced cucumbers
- 2 cups of thinly sliced napa cabbage
- 2 cups of baby spinach, sliced
- 2 cups shredded chicken
- 1 cup of whole, unsalted cashews
- 2 tablespoons sliced green onions
Sesame Dressing
- 3 tablespoons of low sodium soy sauce
- 2 tablespoons of rice vinegar
- 2 1/2 tablespoons toasted sesame oil
- 1 tablespoon canola oil
- 1 teaspoon sriracha sauce
- 1 tablespoon minced fresh ginger
- 1 minced garlic clove
- 2 tablespoons diced fresh cilantro (optional)
- 1 tablespoon of honey
- 1 teaspoon of sesame seeds
Steps:
- Mix all the sesame dressing ingredients together in a bowl, and whisk
- Combine all the salad ingredients together in a big bowl, and toss together
Optional:
- Combine the salad ingredients with around 3 tablespoons of dressing in a mason jar, and shake to combine.
Notes:
- Salad will last 3-4 days in the fridge
