Asian Chicken Mason Jar Salad

Time: 30 minutes (but I'm a slow prepper)

Ingredients:

  • 1 1/3 cup of halved snap peas
  • 1 cup of grated carrots
  • 1 red pepper, julienned
  • 1 1/3 cups of thinly sliced cucumbers
  • 2 cups of thinly sliced napa cabbage
  • 2 cups of baby spinach, sliced
  • 2 cups shredded chicken
  • 1 cup of whole, unsalted cashews
  • 2 tablespoons sliced green onions

Sesame Dressing

  • 3 tablespoons of low sodium soy sauce
  • 2 tablespoons of rice vinegar
  • 2 1/2 tablespoons toasted sesame oil
  • 1 tablespoon canola oil
  • 1 teaspoon sriracha sauce
  • 1 tablespoon minced fresh ginger
  • 1 minced garlic clove
  • 2 tablespoons diced fresh cilantro (optional)
  • 1 tablespoon of honey
  • 1 teaspoon of sesame seeds

Steps:

  1. Mix all the sesame dressing ingredients together in a bowl, and whisk
  2. Combine all the salad ingredients together in a big bowl, and toss together

Optional:

  1. Combine the salad ingredients with around 3 tablespoons of dressing in a mason jar, and shake to combine.

Notes:

  • Salad will last 3-4 days in the fridge
