Heavenly Hummus Wrap

Ingredients:
- 1 tablespoon of butter or olive oil
- 1/2 red onion, halved and sliced
- 1 whole Spinach flour Tortilla
- 1/4 cup of hummus
- 1 whole Roasted red pepper (jarred) sliced
- 3 whole canned artichoke hearts, halved
- 2 cups of mixed greens
- 1 tablespoon of Balsamic Vinaigrette
- 1/4 cup of feta cheese
Steps:
- Melt the butter in a skillet over medium-low heat
- Add the red onions, and cook slowly for 10-15 minutes.
- Set the onions aside to cool
- (Optional) Grill the tortilla over medium heat for 1 minute (until it has grill marks)
- To assemble the wrap, put down a layer of hummus down 1/3 of the tortilla
- Arrange the cooked onions, and sliced roasted red peppers over the hummus.
- Add the artichoke hearts, the salad greens, and the balsamic dressing.
- (Optional) Sprinkle on the feta cheese
- Wrap up the tortilla
